Rosemary Mezcal Fizz

  1. 2 ¼ oz mezcal (Casamigos Mezcal)
  2. 1 ¼ oz lemon juice
  3. ¾ oz agave nectar
  4. 1 oz egg white
  5. 2 oz club soda
  6. 20 rosemary leaves
  7. 1 pinch salt
  8. 1 lemon peel

Muddle rosemary leaves and salt in shaker. Add remaining ingredients except club soda, shake with ice, dry shake, and strain into a chilled collins glass. Top with club soda. Garnish with a rosemary sprig.
