Shake with ice and strain into a chilled rocks glass filled with crushed ice. Garnish with a mint sprig.
For the cream of coconut, I used Coco Reàl, which comes in a nice squeeze bottle and is already sweetened. If you buy pure cream of coconut without sweetener, you'll need to add simple syrup or coconut sugar syrup to taste.
